Cream of bean sprouts

INGREDIENTS

  • Soybeans sprouts
  • Parsley
  • Soya milk
  • Vegetable broth
  • Oil
  • Stale bread croutons
  • Salt and pepper

METHOD

Blanch the soybean sprouts and blend them in the soy milk adding parsley and vegetable broth if needed. Toast the croutons in a pan with a little oil. Season the cream with olive oil, salt and pepper and the croutons.
